Mandala salads
These are decorated salads meant to bring harmony to the table, and to draw joy, wonder and colour to it. You can make pictures, colour compositions, sacred geometry patterns, words… imagination is the only limit, using raw vegetables, flowers and sprouts.
They make a real impression at shared meals, and they turn into a very collaborative dish, because they’re made of many ingredients that each need their own artistic time in the preparing: grating, cutting, choosing, gathering, cutting out shapes…
Their outward beauty almost stops you breaking them to eat them — which makes them an exercise in letting go of outer beauty and taking it inside.
